Gongura pickle is a famous traditional condiment from Andhra Pradesh in India, known for its strong tangy flavor and rich aroma. It is made from gongura leaves (sorrel leaves), which naturally have a sour taste and are widely used in Andhra cuisine.

The pickle is prepared by washing and cooking the gongura leaves until they become soft and slightly thick. The cooked leaves are then mixed with spices such as mustard powder, fenugreek powder, red chili powder, turmeric, garlic, and salt. A generous amount of sesame (gingelly) oil is added to preserve the pickle and enhance its flavor. Sometimes mustard seeds and dried red chilies are tempered in hot oil and added to the mixture for extra aroma.
